【食譜 】珍珠怎麼做?自己做珍珠一次就上手
通常大家要吃珍珠好像不太會自己做,因為去飲料店買就很方便。如果真的要煮很多,就會去超市買回家自己煮~但是我發現,在超市買的珍珠還是會放防腐劑等添加物。所以自己做的話,只要確保樹薯粉的來源是安全的,自己做的珍珠還是比外面買的健康許多!
而且自己做珍珠其實也不麻煩,想吃就做一些來吃,做太多也可以冷凍起來不會有負擔!

我這次買的木薯粉,又寫地瓜粉,讓人搞不清?但背後成分寫樹薯澱粉就買了。

2. 把黑糖水煮到滾後把粉丟進去關火(非常重要,一定要用滾燙的水),再拌一拌,就變下圖的樣子。
3. 把還沒均勻混合的麵糰放到的乾淨平台。

4. 這時候麵糰有點燙,但是我自己覺得用手把粉跟黑糖揉勻,對我來說是還可以接受的溫度(一開始有嘗試戴手套揉覺得不好揉)揉一揉混合後,就會變成像下圖這樣的麵糰。

5. 混好後在平台上再灑些樹薯粉以防沾黏,可以用桿麵棍把麵糰滾成平的。但麵團非常Q,也不好滾,我是用手把麵團拉開邊把麵糰滾平。最後變下圖右邊這張模樣,厚度大約6mm。

6. 用刀子或廚房剪刀,把麵糰切成一條一條約1CM的寬度,每一條再切成1CM的間距,每一個小方塊揉圓就是一顆一顆的珍珠啦!!

7. 全部揉完的珍珠!不馬上煮的話,就是在這時候把珍珠冷凍起來保存。可以搓點粉以防沾黏。

8. 放一鍋水煮滾,放入珍珠後大火煮到滾,再關小火煮。約煮5-10分鐘後(依個人喜好的軟硬程度而定),關火再悶一下5-10分鐘(依個人喜好的軟硬程度而定)。

9. 就完成啦!!!撈起珍珠後,再拌一些糖,珍珠比較不會黏在一起!
